I may have missed this feature in the documentation, but is there a script command to download and update UVK silently?

Yes, there is: UVK_en.exe -Update

To see the full command line: UVK Options >> View UVK command line help

Fred, is there an equivalent for the portable version? tried it and it just loaded as normal. It doesn't need an update but there was no sign that it checked.

In the C++ version you need to also specify the file extension:

UVK_en.exe -Update

Odd. Ran the same command earlier (from the MRU in the Run box) and kept an eye on the running processes. This time, it loaded uvkportable which started up uvk_en and then disappeared. I'll assume it checked for an update. Nothing was different in the command used to run it.
Regardless, it's working now and got it up as a scheduled task so my NAS version should never be out of date!
